Parsnips

The Parsnip is a winter root vegetable related to and resembling the carrot, but much paler in color. Parsnips are native to Europe, where they were at one point the most important and widely used vegetable.

Parsnips can be eaten raw or cooked in a variety of ways. They are a good source of dietary fiber and contain higher amounts of vitamins and minerals than their relative, the carrot.
