About
An Italian cheese from the Trentino-Alto Adige area of Northern Italy. It is made from unpasteurized cows' milk by a single producer, Rifigio-Crucolo. Three types are available: Il Piu Saporito (tastiest), Il Piu Dolce (sweetest), and Al Vino (with wine).

Ivory colored with irregular holes dispersed throughout the cheese. Cylindrical shaped in wheels weighing about 25 lbs.
