Fish cakes are pressed cakes derived from haddock, pollack or other mild-to-flavorless fish. They are commonly colored bright pink, white with pink swirled centers, among other similar colors. They are sliced thinly in discs and used in ramen, udon or oden. You can find them in the refrigerated section of Japanese markets.
