Italian Grilled Vegetable Salad

Grilled vegetables are one of those dishes that everyone loves. It is a very common to eat grilled veggies in Italy, especially during the summer.  The vegetables take on a new personality when subjected to such direct heat.  This dish is very easy to make albeit a bit time consuming.  You can grill these veggies on the outdoor barbecue or indoors using your grill pan.

Italian Grilled Vegetable Salad

Ingredients:

1 eggplant
2 red or yellow bell peppers
2 zucchini
2 Portobello Mushrooms
¼ cup chopped parsley
2 cloves garlic
8 ounces Goat Cheese
¼ cup toasted pine nuts
salt and pepper to taste
1/4 cup extra-virgin olive oil plus more for drizzling
2 Tablespoons lemon juice
