German Apple Pancake
Ingredients
1 1/2 teaspoons Butter
          1 1/2 teaspoons Canola oil
          4 Granny Smith apples, peel, core & slice
          3 tablespoons Granulated sugar
          1/2 teaspoon Vanilla extract
          1/4 teaspoon Ground cinnamon
          1 cup Apple cider
          3 lrg eggs
          1/4 cup All-purpose flour
          2 teaspoons Granulated sugar
          1/4 teaspoon Salt
          3/4 cup 1%% low-fat milk
          Confectioner's sugar, for dusting

TO MAKE PANCAKE: Preheat oven to 400 F. Lightly oil a 12-inch cast-iron or other ovenproof skillet or coat it with nonstick spray.
