Chicken Alfredo is a favorite comfort food meal in my house. Strands of chewy pasta are mixed with a luxurious cheese sauce and topped with slices of grilled chicken. But with most dishes this indulgent, you can only eat them every once in awhile. This low-fat version of chicken Alfredo allows you to enjoy this delicious dish without the high caloric repercussions. To pack extra nutrition into this dish, use whole wheat pasta and add a vegetable like spinach or broccoli.
Ingredients:
4 chicken breasts, cooked and diced into bite-size pieces
1 lb. farfalle pasta
1 1/2 tbs. butter
1/3 cup all-purpose flour
1 1/2 cups, skim milk
1 tsp. garlic powder
1/3 cup white wine
1 lemon, juiced
1 tsp. salt
1/2 tsp. black pepper
Parmesan cheese
