Jelly beans and chocolate.  All these these symbols are trademarks of Easter.  These Easter treats focus on recipes that reinvent carrot cake.  All the classic flavors including cinnamon, nutmeg and ginger are present in each dessert.  You can prepare something as simple as a carrot cake crinkle cookie or as grandiose as a Hawaiian inspired carrot cake with cream cheese frosting.

This delicious Hawaiian carrot cake with coconut frosting is a mouth watering dessert.  Freshly grated carrot and pineapple are baked into a moist spice cake.  Use the best spices available to bake this cake so the diverse flavors really come through.  This usually means grinding your own whole spices (in a mortar and pestle or coffee grinder).  Frost the carrot cake with homemade coconut icing made with cream cheese, sour cream, and powdered sugar.
