Chilly Fall nights are upon us, which call for comforting meals that warm us from the inside out. One of our favorite meals is a simple and healthy bowl of soup (even one out of the can or box) that we “doctor up” with grains and fresh herbs. We start with a good organic tomato soup (we like Pacific Natural Foods Hearty Tomato Bisque), and top it with a scoop of quinoa (or your favorite grain) with chives and flat leaf parsley or any herb or herb combination. It takes just minutes to whip up, is healthy, and clean-up is a cinch. Serve this easy dinner with toasty grilled cheese sandwiches and you’ve got one tasty meal!
