Sweet Summer Corn Ice Cream

Ice cream and summer are the perfect match. When I saw this recipe for Sweet Corn Ice Cream, by celebrity event planner; Andrea Correale, of Elegant Affairs, it became my newest obsession. What's not to love about sweet, juicy corn fresh off the cob, and mixed with a cool, creamy ice cream base? 

This recipe is extra special, as there is no ice cream maker needed! Andrea was even kind enough to share some of her favorite ice cream tips and recipe ideas. Your family and friends will be pleasantly stumped trying to figure out what the delightful new flavor is. 

 

Elegant Affairs Sweet Corn Ice Cream 
  1 Cup Heavy Cream
  1 1/2 Cups Milk 
  3 Tbsp. Salted Butter
  2 Ears Sweet Corn, kernels removed from the cobs, cobs reserved
  6 Egg Yolks
  1/3 Cup plus 1/4 Cup Sugar
  Coarse Kosher Salt, for serving, if desired
Method
Combine the cream, milk, butter, and corn cobs in a saucepan.  Bring to a simmer over medium heat.  Cook for 10 minutes then remove corn cobs and discard.
Whisk together the egg yolks and 1/3 cup sugar in a bowl until the mixture becomes pale yellow in color.  Whisk in a few tablespoons of the hot cream mixture to temper the yolks, then add the yolk mixture to the saucepan and stir over low heat for 1 minute, until it is thick enough to coat the back of a spoon.  Remove from heat.
Bring 1/2 cup water, corn kernels and the remaining 1/4 cup sugar to a simmer in a small saucepan, stirring until the sugar has dissolved and the kernels are plump and soft, about 10 minutes.  Remove from heat.  Add the corn mixture to the cream mixture and allow to cool.  Refrigerate for 3 hours or overnight.When cold, process and freeze according to ice cream maker¹s instructions.

When entertaining guests, I like to let them make their own ice cream sandwiches. You can put a variety of items out, like vanilla wafers to go with Creamsicle flavored ice cream, double chocolate chip cookies to pair with black raspberry ice cream, or ginger snaps for green tea or pistachio ice cream. 
 
You can also set up your own ice cream sundae bar ­ incorporate a few different types of ice cream with an array of toppings, including some healthy options like raw almonds and coconut, and carob chips. Your guests will love making their own creations.
 
For adults, try a boozy ice cream as a fun dessert option. Flavors can include dark chocolate whiskey and salted caramel, rum coconut cream, or vanilla bean and maple bourbon. Additionally, you can serve up a traditional Italian espresso-based dessert called affogato ­ just pour a shot of espresso over a heaping scoop of ice cream (and a shot of liqueur for the adults) and serve immediately.
 
You can incorporate some modern food trends and fun dessert themes as well, like a healthy, dairy-free pistachio avocado ice cream, or a southern blueberry cobbler ice cream. Other unique flavor combinations include chai spice coconut cream, or honey lavender.
