Gluten-Free Lemon and Chia Seed Muffins

Ingredients

1 large lemon, juice and zest
45ml/1.5fl oz maple syrup
90g/3.25oz gluten-free all-purpose flour
½ tsp. baking soda
½ tsp. salt
1 tsp. vanilla extract
20ml/0.66fl oz coconut oil
60ml/2fl oz yoghurt
30ml/1fl oz milk
20g/0.66oz chia seeds

Preparation

Mix together the egg, lemon juice, lemon zest, vanilla, coconut oil, yoghurt, milk, and chia seeds in a bowl.

Whisk together the flour, salt, and baking soda in a separate bowl.

Mix the dry and wet ingredients.

Pour the muffin batter into a non-stick muffin pan.

Bake at 190C/375F for 12 minutes.
