Sfougato is a kind of omelette with zucchini cooked in the oven. Much healthier than a simple omelette but so delicious.
Grate the zucchini at the grater. Add salt and put them in a colander for an hour, squeezing them to dry.
In a frying pan heat half of the oil and saute onion, scallions, zucchini. When the ingredients are completely dry in the frying pan add mint, dill, and take out of the fire.
Let the mixture cool. Preheat oven at 180oC. Beat eggs, add feta cheese, and finally add the mixture of the frying pan.
Add the rest of the olive oil in a pan (30x20 cm) and pour inside the mixture.
