15 medium muffins or 12 mini and a small loaf
1 1/2 cups Unbleached AP Flour
3/4 cup Flaxseed Meal
3/4 cup Oatbran
1 cup Brown Sugar
2 teaspoons Baking Soda
1 teaspoon Baking Powder
1/2 teaspoon salt
2 teaspoons Cinnamon
1 1/2 cups Carrots, peeled & grated, (about 2 medium)
2 Apples, peeled & grated
1 cup Raw Walnuts, chopped
3/4 cup Milk, 2%%
2 Eggs, beaten
1 teaspoon Vanilla
Preheat Oven to 350.
Mix together dry ingredients, from flour to cinnamon in a large bowl
Stir in grated carrots, apples and chopped nuts
Pour liquid ingredients into dry ones.
Mix gently, until just moistened.
Do not overmix.
Fill muffin cups 3/4 full
Bake muffins at 350 for 18-20 minutes
Bake a small loaf for about 40-45 minutes
