6 good sized mugs
1 1/2 cups fresh pomegranate seeds
4 tablespoons medium size broken wheat [dalia]
1/2 cup fresh pineapple,diced [you can use store-bought frozen too]
1/2 cup cucumbers, diced
For the dressing:
5 fresh mint leaves
1 green chilli [optional]
1/2 ” fresh ginger shoot, finely grated
1/2 teaspoon brown sugar
1/2 teaspoon black salt [available in Indian grocery stores]
Salt to taste
Cook the broken wheat as per package instructions.
This is how I cook broken wheat (dalia): Put 4 tbsp of broken wheat with about 5-7 tbsp of water in a microwave safe bowl and cook on microwave high for 4 minutes.Once slightly cooled, fluff using a fork. Let the dalia cool down to room temperature.
In the jar of the blender, tip in the mint leaves ,and green chilli [if using] and blend it to a smooth paste using 1 tbsp of water [or more if required]
Transfer the paste to a small bowl and add the lemon juice,grated ginger,lemon zest,black salt, brown sugar, black pepper and salt to taste.Whisk everything well to combine.Keep aside.
Before serving: Mix the cooked broken wheat and all the fruits together and drizzle with the dressing.
