This healthy soup is a terrific way to stretch your grocery dollars.
1 small onion, chopped
2 tablespoons olive oil
2 cups celery, thinly sliced
2 cups carrots, thinly sliced
4 cloves garlic, minced
1 pound extra lean ground beef, crumbled
1 tablespoon thyme, fresh minced
1 tablespoon Worcestershire sauce
Heat a dutch oven over medium heat with olive oil. Add onion, celery, carrots, and garlic. Cook for 8 – 10 minutes until softened. Add ground beef and cook until beef is cooked through – about 5 minutes.
Add remaining ingredients EXCEPT sour cream and parsley. Reduce heat to medium low and simmer for 20 minutes.
