egg salad, hardboiled egg
1 hardboiled egg, peeled and diced
2 Tbsp mayonnaise
1/2-1 tsp Dijon mustard
1/4 tsp paprika, sweet or smoked
1/4 tsp fresh chives, minced
Salt and Pepper to taste
Combine all ingredients in a small bowl, mixing well to combine.
Serve between slices of (gluten free!) bread, as filling in a lettuce wrap, or over lettuce as a salad.
