Lately I've been on this kick to find the cheapest cut of meat at the market each week and braise or stew it into deliciousness. 
 
The stuff we remember, the stuff our grandmothers cooked, the family favorites.  They are peasant food, cheap cuts of meat made edible through the application of heat and moisture until the meat fell apart.  That's what I'm currently exploring.
