The reason I write about side dishes is this: a good cut of meat or fish can shine on its own with little adornment, and dessert is easy--who doesn't love sugar and/or fat? So I say make the side dish sizzle. It's also healthier, because you are more likely eating vegetables and whole grains in the side dish.
