I'm an English man living on the rural and beautiful Island of Pag in Croatia with my wife and daughter. I have been working at Gligora Dairy since 2009 where I have been learning about the artisan methods and traditions of making Paški Sir, a full bodied ewes' milk cheese with a very distinct flavour.
