How much sofrito for 2 chicken arroz con pollo

It actually depends on how much you like sofrito. For 2 servings of arroz con pollo I use a small onion, some red and green pepper, celery and garlic. Shop it all up, fry it in olive oil, and you got your sofrito.

I usually put enough sofrito to coat the rice nicely. And yes, it does depend on how much you like sofrito. I once saw on a menu Pizza with Strawberry Sofrito. It sounded so weird I had to try it. It was delicious!
