With ricotta I prefer a little spinach and fine shredded lobster filling. Sometimes I add a bit of fresh white pepper and a drop or two of lemon juice.

Are you asking for a flavored ricotta cheese filling for ravioli? Or alternate fillings? If you have a ricotta-based filling, I like to serve it with a lemon sauce.
