I grew up in the Yakima and Wenatchee Valleys...the world's apple harvest capitals. Regardless what everyone else says...roast the apple you like the most. Fuji, Jonagold, Honeycrisp, Cameo, Pink Lady all will work. All the apples I have mentioned will hold their form and are firm and crisp.....and yummy!!
Granny Smith's are a solid choice- they are pretty much available everywhere. Like Curt, I like the Honeycrisp and Pink Lady Apples too. I did pick up some really nice McIntosh apples a few days ago- just because they were so beautiful, and made a little apple and proscuitto crepe with them.

I like to use Granny Smith's because they are nice and crisp and not too sweet, great to add to savory dishes as well as deserts.
