In the Mediterranean and Middle Eastern countries Spring is the time when freshly produced dairy products become in abundance, due to the rise in sheep production (Baby sheeps are born and their Mama sheeps have lots of milk to give) so Feta cheese is fresh during that season!! and it is only natural to use it with fresh spring greens to make this popular salad...makes sense?
Also, Autumn in that part of the world is the season to harvest and pickle olives of all colors...so it is ,again, natural to use freshly pickled olives and fresh olive oil in that salad too.
although in our current time feta cheese,olives and olive oil are available all year round, it makes Greek salad a good choice any time of the year.
