A marinade can be made from just about any combination of ingredients- both wet or dry. Here's a few recipes. Whether you rub a dry marinade into your meat or veggie or soak it in- it will work just as well.
Marinades can also act as a tenderizer: Pineapple juice will tenderize pork or chicken. Some marinades will cook: Lemon over fish as in Ceviche. Curries are based in deep marinating over several days which not only will help preserve meats, but also develop the most wonderful flavours.
