A good temperature at which to bake salmon is around 375 degrees F. More importantly than temperature, however, is the distance the fish is from the heat as well as the thickness of the fillet. You want your fish to be medium-rare and firm, yet still very tender on the inside. If it looks almost or barely done, remove it from the oven as it will continue to cook while it rests.
