Short answer most are edible, but not all. Some types of bamboo absorb silica from the ground. Silica is the main component in beach sand. The silica is actually pulled into the plant and cannot be washed off. Though it won't make you sick, it can be gritty and scratch your teeth. Other types tend to be bitter, though this can be reduced or eliminated in most cased by cooking.
