Question: At What Temperature Does Olive Oil Burn?

I've been using olive oil more lately when making stir-fry and sauteing in general, but I seem to burn it a lot. Anyone know how much heat olive oil can take?

It depends on the quality of the oil and the presence of dissolved components. The so called "smoking point" may go from around 375oF to 425oF (regular extra virgin olive oil - low acidity - around 405-410oF).
