Ventreche is the largest possible bacon slab from animals skillfully cut from the ribs to the loin by the French butchers. The American butchers don?t do this because this technique does not yield the ribs. This slab of bacon is slowly cured with cold smoke after treating with pepper, kosher salt, brown sugar, juniper berries and sage for long storage.
