Question: what are the qualities of a good cookies

That's subjective. Some people like soft and chewy. Some people like crispy. Some people like gooey and full of stuff. Some people like plain and simple. Personally...a well made cookie using good ingredients are what I like. No margarine instead of butter...no imitation vanilla extract...stuff like that. But like I said...they are subjective.

Gosh, this is so varied. I personally love the soft, chewy ones but my mum insists those have been left out too long and lost their crispiness. She likes crispy ones, my husband likes chunky, dad loves smooth and plain. To echo what Curt said... most importantly, good ingredients.

The sound of the crust being broken into when you bite into it, the feel of the buttery crumbs on your tongue, the taste of the salt and sweet together and look of the perfect round edges.

It's a very personal question...the answer will be different for each person. My family, for the most part, prefers soft, chewy and fudgy cookies. But it can also depend on the cookie itself. There are some that just naturally are crispy, like Moravian cookies. And others are softer/chewier, like molasses and sugar cookies. But it also heavily depends on the type and amount of sugar used. The more brown sugar used, the chewier/softer the cookie will be because there is more moisture in brown sugar than in white sugar.
