To make Rambutan wine , discard syrup from rambutans and chop the fruits. Place the fruit in a nylon straining bag and tie closed. Add sugar, water, acid blend, Campden tablet, tannin, yeast to it and set aside for 6 - 8 hours. Add pectic enzyme . Ferment to dryness and refit airlock. Repeat every 30 days until wine stabilizes. Sweeten if desired. Age 6 months before tasting.
