There are several recipes for honey carrot cookies or oatmeal carrot cookies on Foodista. You can change granulated sugar in most recipes to Date Sugar- (which is ground dates), to make them a bit healthier. Date sugar is not quite as sweet as regular sugar- but in most cases, you won't notice. Date sugar is usually available with the sugars or in the healthfood /natural food section of your grocers.
I have one (fairly) healthy cookie. It's a gluten-free peanut butter cookie and there couldn't be an easier cookie. I'm about to put add the recipe onto my profile. It's healthy, delicious and easy!
