Bruschetta has origins as far back as the 15th century, possibly earlier. Traditionally, as olives are taken to be pressed, growers will take some country bread and put it over the fireplace in the pressing room. As the oil comes from the press, the growers sample the oil on the bread. They also rubbed garlic on the bread. This is also how they saved stale bread.
