Chicken will change tastes after 24 hours. If I'm not going to eat it the next day, I freeze it to pull out later. When I grill chicken (usually a whole one) I freeze the leftovers to be used at a different time. Fresher is better. Turkey gets a tin taste within 24 hours- chicken shortly after that. Freezing stops this process. -FYI removing the bones from leftover chicken helps to keep it fresher tasting somehow. (at least I think so).

It depends on what kind of left overs they are. Here's the simple answer: Wrap all leftovers well...with plastic wrap or in a container with a tight fitting lid. Eat them in the next 2 or 3 days. Leftovers are intended to be eaten the next day for lunch or dinner...not left in the fridge for an indefinite amount of time. Eat them up and don't worry how long they last. If you are talking about a large quanity of leftovers...don't cook so much next time and wrap them well and freeze.
