Some bean sprouts can contain toxins or antinutritional factors. They can be reduced by soaking, sprouting and cooking. Not all bean sprouts contain antinutritional factors.
In most cases bean sprouts are rich in vitamins, minerals and amino acids. They are high in protein and fiber.
There have been outbreaks of food bourn illness associated with sprouts, but this is not a common event.
