The healthiest kind of ice lolly (popsicle, ice pop) is going to be one made from real fruit with minimal additives.
The best ice lolly is homemade, but not from juice. Whatever fruit is in season, purée in a blender, add sugar or honey to taste (even if the fruit is very sweet, you will need some sugar to prevent large ice crystals from forming), and freeze. If you can only get your hand on fruit juice, go for something high in pulp, it'll give the lollies more bodies, and also prevents huge ice crystals.
