I did not know they have edible skin, thought they are like the winter squashes.

Curtis is right- Any summer squash will work. I wouldn't be afraid to substitute small cubes of butternut squash or delicata squash for a slightly different flavor.

Patisson Squash, or Patty Pan squash as they are also called, are pretty mild with white flesh and a skin that is edible. You could substitute Zucchini (yellow or green) or Yellow Squash with out much of a difference.
