Most wines go through a process called oxidation which causes them to go bad. Marsala wine is already oxidized. This not only keeps the wine fresher, longer, but also gives Marsala some of its particular flavor tones. Well sealed and refrigerated, it should stay fresh for a minimum of four weeks.
