You really don't need much oil, just about one inch of olive oil in a skillet will do. Make sure you bread the zucchinni with flour, egg, and then breadcrumbs, they just need a couple of minutes on each side to crisp. I sprinkled them with paramesean cheese after they were done cooking and still warm . You could serve them with ranch style dressing, but I think they were good enought to eat without it!
