The easiest answer is BBQ sandwiches. You could make a mole sauce or my personal favorite- green chili stew. Whenever I make a pork roast- I'll freeze the extra to be pulled out for green chili stew later. (pork, green chilies, roasted tomatoes, broth and onion)
I really like chili pork soup. Great on a cold chilly night: Chop or shred the leftover pork. Add it to a soup pot along with any gravy or drippings left from the pork. Then add: 2 small cans of chopped mild green chilies, one large or two small cans of green enchilada sauce, one can of diced tomatoes with green chilies, 1/2 teaspoons each of chili powder, garlic powder, onion powder and cumin powder. Bring all ingredients to a simmer. Serve with either crushed corn tortilla chips on top or warm flour tortillas on the side. You can also garnish with a dollop of sour cream.
