I like it on rice - especially the persian dish sabzi polo. I think it's best paired with dishes that could benefit from a squirt of lemon. I agree with Chris above that dark green vegetables are a good choice as are butternut and acorn squash.

I like it on Feta cheese and sliced cucumber with a bit of olive oil and salt! It's also nice on beef stew and grilled meats.

It has a tart "citrusy" flavor and can he used to give something a little pucker. Most any green vegetable - asparagus, green beans, spinach ect., would be nicely paired with sumac.
You can make a Middle Eastern spice blend called "zaatar." with sumac that is good on grilled fish.
