Tempering is the process of slowly bringing the temperature of something up, sometimes by adding hot liquid to increase the temperature ( Tempering chicken (or any protein) means cooking it, usually in a sauce or curry, on low heat. Cooking it at a lower heat for longer helps keep the meat tender and reduces over-cooking. Here's a recipe for Tempered Chicken Curry:
