I never cook it- but toss it into my salad greens or top fresh sliced tomatoes with it and a basil pesto. It's really pretty and makes an attractive garnish or make it into a salad with cucumbers and a very light dressing.
It can also be lightly sauteed. I've seen it fried, but think it would be a shame to ruin a perfectly beautiful summer treat!

Purslane is a green...just like romaine, red leaf, chard, collard and hundreds of others. It is a very healthy one as Chris noted above. Healthyness is best when not cooked...cooking washes out some of the great vitamins, etc. Treat it like any other greeen. Make a salad with it, add it to your salad, braise it, saute it...just don't let it go to waste.
