Bouillon is a beef or chicken broth that is condensed by boiling most of the water off until only a sludge is left. This concentrated paste is poured into pans to further dry and then get cut into cubes. In the old days it was called Pocket Soup. Workers would carry chunks of in their pockets to rehydrate in boiling water. Hunters would also carry Pocket Soup to keep themselves going on those long days.
