Well you have a few options. I would usually opt for some simple, fragrant, comforting dish - something that you grew up with. (Pasta & cheese, soup, a casserole)
The advantage to casseroles is that they keep well. You could also make just a plate of tea sandwiches or finger foods.
Things that come to mind-
Lemon Chickpea and Tomato Stew
Cassoulet (there is a whole host of recipes on Foodista)
Cucumber mint tea sandwiches
Homemade Deviled Ham sandwiches
Baked Ziti
Muffaletta sandwiches
Maque Choux
quiche
or if it's someone you knew fairly well and they were known to make a particular dish, cake or pie very well- or really liked a particular dish -you could make that in their memory.

I think something quick and easy that doesn't take a day to make and a half day of shopping.
Smoked Salmon Mousse
Into your food processor put the following: 2each 8oz packages of soft cream cheese 8oz of smoked salmon (nova smoked, loks, hard smoked...anything) 1 teaspoon of lemon juice Blend until smooth.

OR Shrimp Mousse
Substitute salad shrimp for smoked salmon plus - 4oz (1/2 cup) cocktail sauce Blend until smooth

Fresh Fruit Salad You choose the fruit: watermellon, canteloupe, honeydew, grapes, strawberries, kiwi....whatever Use a melon baller to scoop the scoopable ones...toss it....it's good to go..don't mess it up with some dressing of some sort!!

Tomato-Mozzarella Salad Cherry tomatoes cut in half, fresh mozzarella cut into cherry tomato sized pieces, fresh basil, olive oil to coat, kosher salt to taste, drizzle a bit of balsamic over...toss

Curt and Chris's suggestions are great. I'd also suggest having the dish in a disposable container so the family will not need to remember what container belongs to who.

Thanks for the suggestions. I took a salad of marinated mozzarella & cherry tomatoes and ordered a tray of fried fish.
