Black Garlic is garlic that has been allowed to ferment. It is available in select markets (Uwajimaya, perhaps Whole Foods, etc)
Black Garlic is one of the new "it" foods. It is a garlic that has been fermented at high heat and takes on a fig or raisiny texture and a sweet taste. It is said to have extremely high antioxident value. It was primarily used in Asian cooking but is finding it's way into risottos, linguini dishes and bruschettas.
It is available in bulb form at Mondo Food and Amazon.
