They would be very young and tender (often sweet) lettuce, spinach, chard ect. They're usually not more than an inch or two long and picked before the greens have a chance to develop into heads or bunches.
There are many names for young greens. Baby greens is the most common. Micro greens is also another common one. Field greens are usually a variety of greens a bit older but not necessarily. Mixed greens another 'mix' of greens.
