I have issues with whoopie pies. They're either too stiff and craggy (so my pies look like Freddy Krueger's face) or too flat. Any pointers for getting smooth, round whoopie pies?
You are probably whipping too much air into the batter- the air bubbles are probably your craggy pits.
When I'm worried about that, I either run a knife through the batter or pound the bowl on the counter a few times to break the air bubbles.
By the way- my bread always looks like that!
Thanks, you two! I made a second batch last night and stirred as minimally as possible, and they looked MUCH BETTER! I noticed that the last batch to go in the oven looked the best-- could it be because the air had a chance to escape as they sit?

Over blended. Fold the batter by hand with a rubber spatula. Don't use a mixer or hand beaters. Elbow grease. Be gentle...but thorough.

That's a good idea! I made them for a bake sale, and am now just obsessively trying to bake the world's best vegan whoopie pie... a work in progress.
