Bring pork chops to room temperature. Set your oven to broil with a cast iron skillet inside. Season steaks with olive oil, salt and pepper. After 10 minutes, add chops to the cast iron skillet and cook for 3 minutes. Flip chops, sear another 3 minutes. Remove steaks from oven. Set heat to 500. Cook steaks until they have reached preferred doneness, 5-10 minutes more.
