I don't have access to fresh ginger, however, I have whole dried fingers. The recipe I have calls for 1.5 inches of fresh, so, what should I use as the dried equivalent?
Next time you can buy fresh ginger buy a couple pounds, bring them home and cut them into 1 inch pieces. Wrap each piece well with pvc wrap and put all your wrapped pieces into a zip bag...squeeze out all the air, seal and put into your freezer. Next time you need fresh ginger, pull out what you need and you are good to go. Dried ginger looses a lot of what makes it such a great ingredient...moisture. You'll be a happy Dan.

A 1inch piece of fresh ginger will yield approx 1 Tbsp fresh chopped or grated ginger.
1/2 tsp of ground ginger = 1 tsp fresh chopped ginger.
