True Italian biscotti should be hard because they are twice baked (bis= twice, cotto = cooked). So if your biscotti are hard, you're baking them correctly! Here is an excellent traditional biscotti recipe:

Another thing to note (which we often confuse here in the US) is one cookie is a biscotto, the plural form is biscotti.
