Yield: 6 servings

edit Ingredients

2

tablespoons Vegetable oil,

½

cup Chopped onions,

½

cup Chopped celery,

½

cup Chopped carrots,

½

cup Chopped green peppers,

1

cl Garlic, minced

12

ounces Cooked navy,or great

12

ounces Great northern beans,

2

cups Water,

16

ounces (1 can) chopped tomatoes,

½

teaspoon Dried basil,

½

teaspoon Dried oregano,

1

Bay leaf,

Salt and pepper to taste,

2

tablespoons Parmesan cheese,

Step 1

Heat oil in large saucepan. Add onions, celery, carrots, green pepper and garlic. cook until tender, about 10 minutes. Add water if necessary to prevent drying. Add beans, water, tomatoes and spices.

Step 2

Reduce heat to low and cook 1 hour. Remove and discard bay leaf.

Step 3

Sprinkle cheese over soup before serving.
